Mexican food has always been a favorite of mine. Mostly because chips and salsa are the seventh wonder of the earth, but tacos are good too.
My family used to get Mexican food all the time. There’s quite a few good spots in my hoometown, surprisingly. Colorado isn’t exactly known for it’s cuisine. But regardless, I would get a massive bean burrito and sopapillas at least twice a month. Always sopapillas. Now that I’m on Whole30 (and generally don’t eat that food), I’ve been craving mexican food.
My parents recently went on a vacation to New Mexico to see a park or something. I’m not sure, I don’t do nature. I live in LA. But after talking to my mom about the trip, it seemed the park was secondary to her desire for authentic fajitas. I don’t blame her. Isn’t that what vacation is for? I have a hard time understanding why people go places for any other reason but food. And don’t even get me started on continental breakfast.
So after hearing the word fajitas 500 times in one phone call, I got a hankering for some. Odd, because I would never order fajitas at mexican restaurants myself. But I always loved hearing that sizzle. What a grandiose entrance for some peppers.
Anyways, after making fajitas myself, I regret not ordering them at restaurants! They’re delicious! I’ve been trying to incorporate more seafood into my weekly rotation, so I chose to make these with shrimp. However, they’d be equally as delicious with chicken, like I did the other day.
Bonus! This recipe is made in only 1 skillet, so it makes for some pretty easy clean up 😉
