Mayo goes with everything, am I right?
I’ve always been a mayo person. Because let’s be real, it’s the best condiment.
But for a long time, I was stuck using traditional uses for mayonnaise. You know, sandwiches, wraps, deviled eggs. How boring is that?!
For more than a decade, Subway sandwiches were a weekly occurrence, if not more than that. I’d order the same exact thing every time…for 10 years: whole wheat bread, lettuce, tomato, cucumber, pickles, double provolone, mustard, and mayo. I would proceed to open up my sandwich and eat the pickles first. Many people asked why I didn’t just get pickles on the side. My reason? Mayo. I preferred to eat my pickles slathered in Subway’s junky mayonnaise.
Now, that’s an extreme example. Most people don’t dip pickles in mayo. I don’t entirely blame you. But hey, don’t knock it till you try it, right? Just kidding, you can knock that one. Especially if any of it is from Subway.
It wasn’t until I learned to cook that I realized what my favorite condiment even is. I had literally never thought about it. It was one of those foods I never questioned as a kid or an adult. I now look back with complete horror at the mayonnaise (and everything else) I use to eat. Ignorance is NOT bliss.
Now I realize how easy it is to make mayo and make it healthy! You really only need two ingredients and a blender of some sort. The whole process takes 2 minutes and it’s way healthier than the brands you’ll find at the store.

As much as I love all PK products, there’s something about a homemade batch of fresh mayo that I can’t get enough of. So I rely on Primal Kitchen for the flavored condiments and make this perfect paleo mayo myself.
One final note with this recipe. You’ll need an immersion blender. I use this one and love it!

- 1 medium egg
- 2 tsp garlic powder
- 1 tsp dijon mustard
- 1/2 tsp pink himalayan salt
- 1 cup avocado oil
Ingredients

- Crack the egg into a medium sized mason jar or bowl.
- Add the garlic powder, salt, and mustard.
- Insert the immersion blender into the mason jar and start blending. Slowly add the avocado oil. The mixture will start to come together and form mayo!
Immersion blender tips:
Make sure to use a bowl that has an opening big enough for the immersion blender.
You may need to move the immersion blender up and down as you add the oil to keep it all mixing properly.
