Ahh Sunday Funday. Or Sunday Meal Prep Day if you’re doing the January Whole30. For me, Sunday is my big grocery shopping day, starting with a trip to the Farmer’s Market. And it did not disappoint!
One of my favorite things about living in California is having access to fresh, local produce year-round. It’s the freakin best. Not only because the taste is 1,000 times better, but because I’m able to witness the changing produce with the changing seasons. And I have to say, Winter is my favorite. Well, Winter vegetables are my favorite. Winter everything else sucks big time.
But what’s not to love about Winter vegetables?! Butternut squash, kale, citrus? Hell to the yes. I got a little too excited when I saw blood oranges for the first time this season. I’m not a fan of any other kind of orange, but blood oranges hold a special place in my heart. So I sampled 12 and bought 2. They should really hide the sample table when I arrive. They were damn good though. I’m sad to see the apple crop decrease (the gala apple is my one true love, refrigerated of course), but ’tis time. Time for citrus!
And of course, I’m well stocked on every kind of winter squash – spaghetti, butternut, and even some heirloom pumpkins. Perhaps some pumpkin soup is in order?! There’s nothing like a warm bowl of soup on these frigid LA nights. I’m a baby, whatever. Have you heard about my heated blanket?
Anyways, I spent much of the day cooking and was desperate for some new recipes. For whatever reason, hearing about my mom’s terrible experience with chicken fajitas on vacation made me crave them. Don’t ask me about my thought process.
Meal 1: garlic herb chicken, sautéed leek greens and spinach, half an avocado, and roasted brussel sprouts
Meal 2: chicken fajitas with avocado over cauliflower rice
Snack: mini salad with mushrooms and homemade balsamic dressing
Meal 3: salmon with pesto zoodles and cauliflower mash
