Day eleven has come and gone! Which is good because supposedly it can be one of the hardest days. A lot of people cave on this day because even though you’ve made it almost two whole weeks, the end seems far and the cookies seem near. I’m happy to report I haven’t had any cookies or even a craving for a cookie. Until right now…
But for real, today was another great day of eating. I’ve had a lot of fun making some epic breakfast meals lately and today was no exception. I had a bunch of leftovers in the fridge, so I threw it all in a skillet, and it turned out edible! Don’t you love when that happens? I’ve had a few skillets turn out pretty bad, but I still ate them. I guess my bar for edible is pretty low. Whatever, I’m not one to waste food.
In fact, I spent part of the day making veggie broth from leftover food scraps. I saw a video from buzzfeed about using your leftover food scraps for broth, so I thought I’d give it a try. And by golly, it worked! It’ll take some tinkering with to perfect and I’m sure every batch will turn out a little different, but how cool! This is by no means a replacement for my beloved bone broth, but veggie broth has it’s place in the kitchen too :). If you want to try it for yourself, watch this video.
Meal 1: sautéed leek greens, brussel sprouts, and sage with butternut squash and two scrambled eggs
Meal 2: kale and spinach salad with salmon, mushrooms, red onion, avocado, and homemade balsalmic dressing
Snack: granny smith apple (my least favorite apple btw) with almond butter
Meal 3: turkey vegetable chili topped with tessemae’s ranch and a side of steamed cauliflower/broccoli mix
