I’ve recently been experimenting with gluten free foods. Not because I have Celiacs, not because I’m intolerant. Just because. Staying away from gluten is huge when I’m trying to keep my carbs in check. The only thing keeping me from going completely gluten free is almond butter. I know I know, almond butter is already gluten free! And almond butter isn’t full of carbs, so what am I even talking about?
Here’s the thing. I’m not about to eat it out of the jar. Finding the right vessel to deliver the almond butter to my mouth is just as important as the almond butter itself. I’ve always been a big fan of almond butter (or any other nut butter, let’s be real) on toast. Straight up multi grain bread was my style. There’s something magical about the crisp & probably a little burnt (because my toaster oven is from 1824) face of the bread with the smoothness of the almond butter. Something about how the warmth of the bread melts the almond butter as you spread it. Heaven.
So how do I achieve this satisfaction without the gluten? Lots of companies make gluten-free breads, but I’ve yet to find one that actually tastes like bread. They mostly taste like dirt. Cardboard if you’re lucky. I’m not into it. However, I’m SUPER into flax. And this flax bread recipe might be the answer to my almond butter woes.
Ingredients
- 2 cups flax meal
- 1 tablespoon baking powder
- 1 teaspoon pink himalayan salt
- 1/2 tablespoon cinnamon
- 1 teaspoon granulated stevia
- 1/2 cup liquid egg whites (or 5 egg whites)
- 2 whole eggs
- 4 tablespoons olive oil
- 1/2 cup water
Instructions:
- Preheat oven to 350°
- Mix all dry ingredients in a large bowl.
- Mix the egg whites, eggs, and oil in a separate bowl.
- Add wet ingredients to dry ingredients.
- Slowly add in 1/2 cup water until desired consistency.
- Grease a loaf pan and place parchment paper on top. This will make the loaf easier to get out of the pan, but isn’t necessary. Pour batter into loaf pan.
- Bake for 30 minutes, or until edges start to lightly brown.
