I’ve never been really into Taco Tuesday like some of my friends are. In college, I was either working or in class on Tuesday nights and didn’t make $1 tacos a priority. In retrospect, maybe that was a mistake. Because tacos are freakin delicious. Well, good tacos are delicious. I’m not about to rep taco bell here.
About a year ago, my mom made a batch of tacos when I was visiting for Thanksgiving. I’m not sure what sort of crack cocaine she put in those tacos but OMG life changing. I haven’t been able to recreate that since, but these tacos are pretty damn good considering how easy they are to make. I keep mine pretty basic, mostly because I’m lazy. But you could easily add some other veggies to make them more interesting – Sauteed bell pepper and onion would be delish!
I’ve had these tacos every night for 2 weeks now. GET ON MY LEVEL. But make sure to pair with some veggies because #health.
INGREDIENTS:
- 1 pound ground chicken
- 2 Tablespoons coconut oil
- 4 Tablespoons of homemade taco seasoning from Gimme Some Oven (so good!!)
- Siete foods tortillas
- 2 cups spinach or arugula
- 1 avocado
- Salsa of choice (no sugar added, of course!)
INSTRUCTIONS:
- Preheat oven to 350°.
- In a large bowl, mix raw chicken and taco seasoning. Make sure seasoning is thoroughly mixed.
- In a large skillet, melt 2 tablespoons coconut oil and add chicken mixture. Should take 7-8 minutes to cook.
- While that’s cooking, place the tortillas in the oven through the wires (to get taco shape). This should only take about 5 minutes – be careful, don’t let them burn!
- Assemble!
