I never hated broccoli like some kids do. But I didn’t exactly love it, unless it was covered in cheese. I loved broccoli covered in cheese. This recipe has no resemblance to velveeta. And thank god for that.
I’m not gonna lie, the majority of the broccoli I eat is steamed. I actually enjoy the taste of steamed broccoli with a sprinkle of pink himalayan salt. There’s something beautiful about it’s simplicity. I’m also super lazy and I can steam broccoli in my rice cooker while I watch Melissa McCarthy play Sean Spicer on SNL for the 15th time. Never gets old.
Even though I’m into steamed broccoli, I’ll admit that roasted broccoli is way better. Roasted anything is better than it’s steamed counterpart, let’s be real. But again, I’m lazy. I wasn’t lazy today though! I was craving some roasted veggies and because I only have broccoli and mayo in my fridge right now, the choice was pretty easy. Roasted broccoli it is.
I usually just roast my veggies with salt, pepper, and avocado oil (have I mentioned my laziness?). But I was feeling a little more adventurous tonight. I always roast my brussel sprouts with balsamic vinegar, so why not try it out with broccoli too? And boy was I right. This broccoli was incredible.
