Day 29! It kind of feels like Christmas Eve Eve, you know? The milk and cookies have been replaced with hard boiled eggs and almond butter and the only gift I’m expecting over the next few days is the gift of constipation. But it’s pretty close.
I’m actually excited about the first day of reintroduction because I’ll have peanut butter. And I love peanut butter. The beans I could care less about because I ate a lifetime supply of beans during my 12 years of vegetarianism and I had the gas to prove it. And macronutrient-wise, beans aren’t anything to go on about. They’re significantly higher in carbohydrates than in protein (nearly 3 times higher for black and garbanzo beans!). I’ll talk more in depth about my thoughts on legumes on Wednesday, but in short, I’d rather eat a sweet potato.
Keepin it short today, but will be posting my final thoughts on this January Whole30 journey tomorrow! Looking forward to see what foods constipate me this time. Too much info? Whatever.
Meal 1: two hard boiled eggs, steamed broccoli, roasted purple sweet potato
Snack: bone broth veggies (and some crock pot chicken)
Meal 2: tuna salad, red onion, avocado, purple sweet potato, and mushrooms over mixed greens
Meal 3: garlic herb chicken breast and roasted cauliflower
