Potato Leek Soup

It’s embarrassing how much time I spend watching bad Christmas movies in December. Not like The Santa Clause 2 bad…like Hallmark Channel bad. 

I know, I know. I’m like breaking some sort of film school code by even having the Hallmark Channel. It’s not like I sought it out or paid extra for it. That’s would be weird. But it came with my cable package, which came with my apartment. And I’m not one to turn down free TV.

Let’s be real. Watching movies on TV is 100 times better than watching movies straight through. Mostly because I always have to pee and commercials are like built in pee breaks. There’s nothing more annoying than pausing a movie. I play by Gilmore Girls rules when it comes to movies – no talking, no pausing, no shuffling around. It messes with the flow of the story and you’ll likely miss important parts. BUT when a movie is made with the intention of having commercial breaks, there’s nothing to worry about! You can actually get stuff done during movies…wash the dishes, fold your laundry, shave your legs. JK, I haven’t done those things in weeks.

Also, it’s worth noting that even if you do miss something in a Hallmark movie, you can very easily fill in the gaps…they’re literally all the same. See format below.

  1. Single woman meets single man. Usually one of them has a kid.
  2. Someone loses or quits their job.
  3. Someone gets snowed in somewhere.
  4. The man and woman start to like each other.
  5. Misunderstanding ruins their relationship, usually caused by some salty ex.
  6. Christmas cookies.
  7. Single tear.
  8. Man and woman reunite.

That’s pretty much everything that happens. You’re welcome.

Apparently Hallmark Channel has their own streaming service now, something I learned during a commercial break. My only question is, who on earth has the confidence to put that app on their phone/tablet/whatever. This is a total guilty pleasure for me. I would never keep that on my devices year round. Hallmark Channel is something you watch when you’re 25 and single OR 85 and widowed. Nothing in between.

The brutal Winter weather of Los Angeles, Christmas movies, and being sick had me craving soup and nothing but soup for days. I would have made my all time favorite Turmeric Chicken Curry Soup but I didn’t have any chicken or any patience. So I made a NEW soup instead!!

I went through a leek phase about a year ago and haven’t had them since. But for whatever reason, they were screaming my name and I stocked up. Good thing I did because I was hit with a major sore throat this week and soup was all I could choke down. Leeks add such a beautiful and mild flavor to any soup. They’ve been the base for many of my vegetable soups. You can pretty much make any soup taste better with leeks.

Anyways, I hope you enjoy this one! Don’t wait until you’re sick to make it! Batch cook it and freeze individual servings like the food prep bad ass you are.

Ingredients
  • 2 yellow potatoes Mine were quite large. Use 3 if medium sized.
  • 2 leek stalks
  • 1 1/2 cups chicken bone broth
  • 1 1/2 cups full fat coconut milk
  • 2 sprigs rosemary
  • 1 bay leaf
Prep Time 5 minutes
Cook Time 30 minutes
Passive Time 30 minutes

Ingredients
  • 2 yellow potatoes Mine were quite large. Use 3 if medium sized.
  • 2 leek stalks
  • 1 1/2 cups chicken bone broth
  • 1 1/2 cups full fat coconut milk
  • 2 sprigs rosemary
  • 1 bay leaf
Instructions
  1. Chop leeks into thin rings and potatoes into cubes. Set aside.
  2. Heat chicken broth in a large pot over medium heat. Add leeks and potatoes to pot and turn heat to low.
  3. Place rosemary sprigs and bay leaf on top. Cover and let simmer for 30 minutes, or until potatoes are fork tender.
  4. Remove rosemary sprigs and bay leaf. Pour broth, potatoes, and leeks into a large food processor or blender. Once smooth, add back to pot over low heat.
  5. Add coconut milk and mix in slowly. Let simmer another 5 minutes.
  6. Serve hot. Top with salt and pepper to taste.
