Ever since moving to LA, I’ve stayed in the city for Christmas. My family was never big on Christmas and I’d much rather avoid the Antarctic weather that is Colorado in December. Sorry fam. Plus, I’ve come to really love LA at Christmas time. But because it doesn’t really feel like Christmas here, at least not the Christmases I’m used to, I try extra hard to make it festive. Holiday scents in October, decorations in November, Christmas music basically year round. I’ve become THAT person.
Even though my decorations are up 2 months early, Christmas day itself couldn’t be more LA. First things first, Starbucks. Thank GOD Starbucks is open on Christmas day because Tanner (my gay bestie) only drinks instant coffee. And I refuse to drink instant coffee. It’s actually a miracle that we’re still friends. That sort of thing is usually a dealbreaker for me. Anyways (#derail), Paleo Cinnamon Rolls from Against All Grain (which are bomb af by the way) are up next. Cinnamon Roll breakfast (usually from Cinnabon) was the one Christmas tradition I cherished. Probably because I was a little chubster and got weird ass presents from my family, so there wasn’t much to look forward to after breakfast. Usually downhill from there. So I’m determined to keep my favorite tradition alive, regardless of my dietary changes.
After cinnamon rolls and Starbucks, we head to the gym. And not just any gym – we go to Equinox in West Hollywood. The most obnoxious gym in all of LA, maybe the world. Don’t get me wrong, I’m always excited to see people getting after their fitness goals (especially during the holidays), but not much of that is happening at Equinox. It’s just another place to be seen. I couldn’t care less. I wore shoes from CVS and had a gaping hole in the butt of the my leggings. Whatever.
My favorite part about the LA Christmas is going out for Thai food in the evening. This year, I ate my body weight in pie before dinner, so I barely ate anything at the restaurant. But what I did eat was freakin amazing. I ordered a chicken curry soup, and ever since then, I’ve been totally obsessed with everything curry. So I came home and paleofied that dish and have had it every day since.
This soup is whole30 compliant and paleo! I’ll be working this into my weekly routine during the January Whole30 FOR SURE. YOU SHOULD TOO!
INGREDIENTS:
- 1 small yellow onion
- 3-4 medium carrots
- 7-8 small fingerling potatoes
- 2 tablespoons ghee
- 2 1/2 cups bone broth (I use homemade)
- 2/3 can full fat coconut milk
- 1 pound shredded chicken (I use my crock pot chicken)
- 1/2 large head of cauliflower
- 3 tablespoons curry powder
- 1 tablespoon turmeric
- 2 teaspoons cayenne pepper (omit if you want less spice)
- salt to taste
INSTRUCTIONS:
- Heat ghee in large saucepan.
- Chop onion, carrots, and potatoes. Add to saucepan and saute together until onion becomes translucent (about 10 minutes)
- Add bone broth, coconut milk, cauliflower, curry powder, turmeric, and cayenne pepper. Simmer until cauliflower is soft (about 15 minutes).
- Add chicken and let simmer another 5 minutes.
- Serve with a lime wedge and salt to taste.
